Recipe: Chicken BLT Lettuce Cups

This recipe is so tasty it’s hard to believe how macro friendly it is. Another bonus is that it’s so quick and easy to prepare! The mixture can be made in advance and kept in the fridge for up to 4 days. I recommend keeping the bacon seperate if you are prepping in advance and add it as you go.

WHAT YOU NEED:

125g Chobani Plain Greek yogurt 

1 tsp dijon mustard

1/4 tsp garlic powder

1 tsp apple cider vinegar

Juice of 1/2 a lemon

1/4 tsp salt

Freshly cracked black pepper to taste

350g shredded BBQ chicken

4 slices bacon, cooked and diced.

1 tbsp chopped fresh chives, plus extra for garnish

2-3 tomatoes, sliced

Butter lettuce cups/lettuce cups of your choice for serving

WHAT YOU NEED TO DO:

In a medium bowl, whisk together the greek yogurt, dijon, garlic powder, apple cider vinegar, lemon juice, salt and pepper until combined. Add in the shredded chicken, diced bacon, and chives and stir together until evenly coated.

Serve in lettuce cups with sliced tomatoes and sprinkle with extra chives!
